Our Story

Born from a
wood-fired oven

Fornace means "kiln" in Italian. It's the heart of our kitchen — a hand-built, wood-fired oven that reaches 900°F and gives everything from our pizzas to our roasted vegetables that unmistakable depth of flavor you can't replicate any other way.

Chef Elena Moretti brought recipes from her family's farm in Campania and paired them with Pacific Northwest ingredients at their peak. The result is Italian cooking that feels both timeless and entirely fresh.

Every dish is made by hand. Every pasta is rolled in-house. Every sauce starts from scratch. We don't do shortcuts — and you'll taste the difference.
